    Homer says about King Makar who has the seat of his kingdom in Lesbos island. Since that time the island was famous for its excellent olive oil which, because of his golden color and the beneficial health properties, was mentioned by Homer as liquid gold. This is due to the unique in the world olive varieties that grows in Lesvos and to the traditional way of harvesting. This gives unique properties to the olive oil which people are benefiting from Homer's time until today.

    In Lesvos island the Kolovi olive variety is growing producing an olive oil of golden color and excellent quality, thin with an intense fruity flavor and characteristic aroma of freshly cut olive. Homer referred to this olive oil and called it liquid gold. It was so famous at that time and the royal family of Priam in Troy used it exclusively. From that time until today the olive tree cultivators managed to maintain the traditional way of olive cultivation, harvesting and olive oil production. This resulted to the same characteristics that distinguished it from the the other oils, even today. The harvesting is still done manually the same way as the ancient times. The knowledge of that time has remained unaltered and, surprisingly enough, similar things apply today. For example getting the olives to the mill within eight hours from harvesting and the method of cold pressed extraction allows the olive oil to maintain low values of acidity and to keep ingredients like polyphenols which are great antioxidants. The golden color of MAKAROS EDOS olive oil is an indicator of low chlorophyll content which is an excellent defense against oxydation.     Our goal is to enhance a quality product from the production to manufacturing process, up to bottling and labelling with a consistency that will be highly appreciated by our customers. Thus we have established the method of hand picking and tendering the olive with care assuring that it will be brough to the mill in maximum 8 hours from the harvesting, in order to guarantee the premium quality of our products.

    We are aiming to offer the health conscious person, who appreciates and understands “gourmet” foods and who has a keen sense of value, an olive oil from a specific terrain unaltered in terms of quality and taste. This reflects the uniqueness of the mineral and organic properties of our soil, local microclimate and the traditional olive oil production method.

    The varieties Kolovi and Adramytini have little needs for the cultivation. The olive cultivars, showing their respect towards nature, refused to use the new processes of intense cultivation and remained devoted to the traditional way which have been taught from their fathers. This way of cultivation constitutes the standard of biological cultivations of any kind. Today the institution DIO, which is specialised in the organic cultivation, has as a purpose to survey the processes and to certify the products. Thus, the published certificates are a proof for the producer and a guarantee for the consumer.
